Abstract

This study is dedicated to the isolation and study of physiologically active substances from the fruits, leaves, and seeds of the Ziziphus jujuba plant, which is widespread in Uzbekistan and valued in folk medicine. Sequential solvent extraction was used to isolate polysaccharides, flavonoids, triterpene saponins, and organic acids from each plant part. The isolated fractions were characterized using ultraviolet spectrophotometry, thin-layer chromatography, and high-performance liquid chromatography. Biological assessment included testing for antioxidant capacity, antimicrobial screening for common pathogenic microorganisms, and assessing the protective potential of the liver on an in vitro cell model. The results showed that the fruit pulp extract was rich in polysaccharides and organic acids, while the leaf extract had the highest concentration of flavonoids and exhibited the strongest antioxidant response. Seed extracts showed the most significant antimicrobial inhibitory effect among the tested plant parts. These results confirm that unnab growing in Uzbekistan is a valuable raw material with pharmaceutical potential that has not been sufficiently studied.
